  • Cold butter (cubed) - 0.5 cup
  • Ice water - 4 tbsp
  • Salt - 0.25 tsp
  • A bunch of fresh asparagus (trimmed and cut into 1–2 inch pieces)
  • Olive oil or butter - 1 tbsp
  • Small onion or shallots (finely chopped) - 1 piece
  • Large eggs - 3 piece
  • Heavy cream - 1 cup
  • Milk - 0.5 cup
  • Grated cheese (Gruyère, cheddar, or parmesan) - 0.75 cup
  • Salt and pepper (to taste)
  • Nutmeg - 0.25 tsp
Instructions
Step-1
Mix flour and salt, then rub in butter until crumbly.
Step-2
Add ice water gradually to form a dough. Chill for 30 minutes.
Step-3
Roll out and press into a tart/quiche tin. Blind bake at 180°C for 10–12 minutes.
Step-4
Heat oil or butter in a pan.
Step-5
Sauté onions/shallots until soft. Add asparagus and cook for 3–4 minutes until just tender.
Step-6
Set aside to cool slightly.
Step-7
Whisk eggs, cream, and milk together. Add salt, pepper, and nutmeg. Stir in cheese.
Step-8
Spread the asparagus mixture evenly over the crust. Pour the egg mixture on top.

Bake at 180°C for 35–40 minutes until set in the centre and golden on top.
