Here’s A Delicious Sheer Kurma Recipe For Your Festive Celebrations

There are some dishes that define an occasion and that is Sheer Kurma for the festival of Eid. Rich, fragrant, luscious, and extremely indulgent, this is the kind of dessert that signals celebration the moment it hits the table.

This sweet dish is the perfect indulgence as the holy month of Ramadan culminates with the joyous celebrations of Eid across the country. Featuring a beautiful balance of textures and flavours, the delicate strands of vermicelli, velvety dates, and the crunch of toasted nuts, all come together in one mouth-watering spoonful. The flavours of cardamom and saffron, and the floral hint of rose or kewra water, elevate the dish’s flavours.

What makes this sheer kurma even more special is its adaptability. You can turn it around to suit preferences: thicker, almost pudding-like, or lighter and more drinkable. You can also load it up with dry fruits, or just let the vermicelli and milk take centre stage.

Ingredients
  • Full-fat milk - 1 l
  • Fine vermicelli (seviyan), broken - 0.5 cup
  • Soft dates (preferably seedless), chopped - 12 piece
  • Sugar (adjust to taste) - 0.5 cup
  • Almonds (blanched & sliced) - 10 piece
  • Cashews (halved) - 10 piece
  • Pistachios (sliced) - 10 piece
  • Raisins - 2 tbsp
  • Green cardamom pods (crushed) - 5 piece
  • Rose water or kewra water - 1 tbsp
  • Few strands of saffron soaked in 2 tbsp warm milk
  • Ghee - 2 tbsp
Instructions
Step-1
Soak saffron in warm milk and keep aside.
Step-2
If using dry dates (chhuhara), soak and slice them thinly.
Step-3
Heat 1 tbsp ghee in a heavy-bottomed pan.
Step-4
Fry cashews, almonds, pistachios, and raisins until golden.
Step-5
Remove and set aside.
Step-6
In the same pan, add another tbsp of ghee.
Step-7
Add vermicelli and roast on low heat until golden brown and fragrant. (Be careful—it burns quickly!)
Step-8
In a large pot, bring the milk to a boil.
Step-9
Lower the heat and let it simmer for 8–10 minutes, stirring occasionally.
Step-10
Add roasted vermicelli to the milk.
Step-11
Cook for 5–7 minutes until soft.
Step-12
Add chopped dates and half the nuts.
Step-13
Add sugar and mix well.
Step-14
Stir in cardamom, saffron milk, and rose/kewra water.
Step-15
Simmer for another 5–10 minutes until slightly thickened.
Step-16
Garnish with remaining nuts.

Serve warm or chilled.
