When the sun is blazing and the afternoons stretch lazily into warm evenings, there’s nothing quite like a cocktail that’s crisp, refreshing, and just a little fiery. This is the AER Picante, a summer-ready drink created by Sahil Kaushal, Senior Bartender at AER at the Four Seasons Hotel Mumbai. Inspired by the gentle rhythm of the sea, this cocktail puts a fruity twist on the classic picante—complete with bright orange, cooling cucumber, zesty lime, and a hint of that jalapeño kick.
The result? A drink that’s equal parts sour, citrusy, herbal, and spicy. It’s especially perfect for sipping while watching the sun dip over the city skyline, or if you just want to start a long night of sipping cocktails on a rather spicy note.
This one’s especially perfect for those who don’t like their cocktails to be excessively syrupy and sweet, making for the perfect balance between fruity and tangy—a mix that’s most ideal for the approaching, unforgiving summer.

  • Codigo Blanco - 60 ml
  • Green Mix - 30 ml
  • Fresh Lime Juice - 15 ml
Instructions
Step-1
Use orange, jalapeno, coriander, cucumber and lime to make green mix.
Step-2
Add all ingredients in a cocktail shaker, shake hard.
Step-3
Strain and pour in an old-fashioned glass rimmed with tajin spice on the side.
Step-4
Pour over a block of ice and garnish it with a jowar/ milo chip.
